Serves 4
  • 500g beef mince
  • 2 cups cooked rice
  • 400g can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup grated tasty cheese
  • Breasoning, to season
  • Oil, for cooking
  • 1 cup cos lettuce, shredded, to serve (packed separately)
  • 1 tomato, diced, to serve (packed separately)
  • 1 lime, to serve (packed separately)
  • Spicy Brauce, to serve (optional)

Instructions

  1. 1Heat oil in a pan and cook the beef mince with Breasoning for 6-8 minutes, breaking it up as it browns.
  2. 2Stir through the black beans and corn and cook for a further 2 minutes to warm through.
  3. 3Divide the rice between meal-prep containers and top with the beef mixture and grated cheese. Refrigerate for up to 4 days, or freeze.
  4. 4Pack the lettuce, tomato and a lime wedge separately in a small container — these are added fresh, not reheated.
  5. 5To serve, reheat the rice and beef base until piping hot, then top with the fresh lettuce, tomato, a squeeze of lime and a drizzle of Spicy Brauce if you like.
