- 500g beef mince
- 2 cups cooked rice
- 400g can black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup grated tasty cheese
- Breasoning, to season
- Oil, for cooking
- 1 cup cos lettuce, shredded, to serve (packed separately)
- 1 tomato, diced, to serve (packed separately)
- 1 lime, to serve (packed separately)
- Spicy Brauce, to serve (optional)
Instructions
- 1Heat oil in a pan and cook the beef mince with Breasoning for 6-8 minutes, breaking it up as it browns.
- 2Stir through the black beans and corn and cook for a further 2 minutes to warm through.
- 3Divide the rice between meal-prep containers and top with the beef mixture and grated cheese. Refrigerate for up to 4 days, or freeze.
- 4Pack the lettuce, tomato and a lime wedge separately in a small container — these are added fresh, not reheated.
- 5To serve, reheat the rice and beef base until piping hot, then top with the fresh lettuce, tomato, a squeeze of lime and a drizzle of Spicy Brauce if you like.
